But most commercial soups — even the ones marketed as healthy — are kidney diet disasters. 700–1,000mg of sodium per bowl is standard.
This recipe is the alternative. A golden, deeply flavourful chicken and vegetable soup that is genuinely low in sodium, potassium-managed, and low in phosphorus — made entirely from scratch, in 30 minutes.
SERVES: 4 · PREP: 10 minutes · COOK: 20 minutes
KIDNEY PROFILE: Low sodium · Moderate potassium · Low phosphorus
[Page]
→ 2 chicken breast fillets (approximately 300g total)
WHY: Lean protein with no added sodium. Poaching in the soup broth
itself keeps the chicken tender and infuses it with flavour.
→ 1.5 litres water (do NOT use commercial stock cubes — they are very high
in sodium. We are building all the flavour from scratch.)
→ 1 medium white onion, finely diced
→ 4 garlic cloves, thinly sliced
→ 2 stalks celery, thinly sliced (moderate potassium — use in controlled amount)
→ 2 medium carrots, thinly sliced into rounds
NOTE: carrots are moderate in potassium. Use only 2 medium carrots
per 4 servings. This gives a small portion per bowl — approximately
60mg potassium from carrots per serving.
→ 100g fine white pasta (small shapes — ditalini, small shells, or broken
angel hair / vermicelli)
WHY WHITE: Lower phosphorus than whole wheat pasta.
→ 2 tablespoons olive oil
→ Juice of 1 lemon
→ Large handful fresh flat-leaf parsley, finely chopped
→ 1 teaspoon dried thyme
→ Black pepper to taste
→ Optional: ½ teaspoon turmeric (adds golden colour, anti-inflammatory
properties, and sodium-free flavour depth)
STEP 1 — BUILD THE FLAVOUR BASE:
In a large saucepan, heat olive oil over medium heat.
Add the diced onion and celery. Cook gently for 5–6 minutes until soft and translucent — do not rush this step. The slow-cooked onion is the foundation of your flavour.
Add the garlic and cook for 1 further minute.
Add the sliced carrots and stir to coat with the oil.
If using turmeric, add it now and stir through — the colour blooms beautifully in the oil.
STEP 2 — ADD LIQUID AND CHICKEN:
Pour in 1.5 litres of cold water.
Add the dried thyme and black pepper. Bring to a gentle boil.
Add the whole chicken breasts — submerging them fully in the liquid.
Reduce heat to a low simmer. Cook for 15 minutes — the chicken will poach gently in the broth.
STEP 3 — REMOVE AND SHRED THE CHICKEN:
Using two forks or tongs, lift the chicken breasts out of the broth.
Place on a board and shred into small, irregular pieces using two forks.
The chicken should pull apart easily — if not, return to the broth for a further 3–4 minutes.
STEP 4 — COOK THE PASTA:
Return the shredded chicken to the broth.
Add the white pasta.
Simmer for 8–10 minutes until the pasta is just tender.
The pasta will absorb some of the broth — this is the desired effect.
STEP 5 — FINISH AND SERVE:
Remove from heat.
Stir in the lemon juice — this brightens the entire flavour and mimics the role that salt usually plays in making food taste 'more itself.'
Stir in the chopped fresh parsley. Ladle into bowls immediately.
→ Protein: approximately 22–26g
→ Potassium: approximately 420–480mg
→ Phosphorus: approximately 200–250mg
→ Sodium: approximately 70–90mg (naturally very low — no added salt)
This soup freezes excellently. Make a double batch (3 litres) on one day per week. Freeze in individual portions in sealed containers. Reheat directly from frozen on the stovetop over low heat with a splash of water. Kidney-safe, home-cooked soup available in 10 minutes on your hardest days.
