Missing a warm weekend-style breakfast? This French toast gets its sweetness from apple and cinnamon, with egg whites providing protein without needing a salty breakfast meat on the side.
For the French Toast
4 slices lower-sodium white or sourdough bread
4 large egg whites
¼ cup unsweetened rice milk*
½ tsp ground cinnamon
½ tsp vanilla extract
1 tsp olive oil
For the Warm Apples
1 medium apple, peeled and thinly sliced
½ tsp cinnamon
2 tbsp water
1 tsp pure maple syrup, optional

Whisk egg whites, rice milk, cinnamon and vanilla in a shallow bowl.
Dip each bread slice briefly into the mixture, coating both sides without soaking it excessively.
Heat a non-stick skillet with a small amount of olive oil.
Cook the bread for about 2–3 minutes per side until golden.
In a separate pan, add the apple, cinnamon and water. Cook for 5–7 minutes until tender.
Spoon the warm cinnamon apples over the French toast.
Add the optional teaspoon of maple syrup across the servings for a touch of sweetness.
When buying bread or plant milk, check sodium and phosphorus additives on the label. Kidney diets differ considerably depending on potassium, phosphorus, protein needs, CKD stage and dialysis status.
Save this for future use.
